BANANA MUFFINS 
1 c. all bran
1/4 c. milk
1 c. mashed bananas
1 egg
1/4 c. soft shortening
1 c. flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/4 c. sugar

Preheat oven to 400 degrees. Combine bran, milk, mashed bananas in mixing bowl. Add egg and shortening; beat well. Sift flour with baking powder, salt, sugar; add to first mixture, stirring only enough to dampen all flour. do not beat or over mix. Fill greased muffin tins 2/3 full. Bake 30 minutes or until cake tester inserted in center comes out clean and dry.

Makes 12 muffins.
