PUMPKIN ICE CREAM PIE 
1 c. and 2 tbsp. pumpkin
1 baked 9 inch pie shell
Dash of salt, optional
1/4 c. brown sugar (may add little extra to suit personal taste)
1/4 tsp. pumpkin pie spice
1 qt. vanilla ice cream or ice milk

Soften ice cream and mix all above together well. May use egg beater to mix. Pile into 9 inch baked pie shell. Freeze. Remove few minutes before serving to thaw just a little. Serve with dollop of whipped cream on each serving and drizzle maple syrup over the top.

DIETITIAN'S NOTE:

This is a delicious pie that is a star on Thanksgiving Day (and it's so easy!). Sugar free brown sugar would work just fine in this recipe and would make 150 calories disappear. Choose ice milk for an even greater reduction in calories and fat.
