PASTA WITH RAW TOMATOES 
SAUCE:

2 lbs. very ripe tomatoes
2 cloves garlic
20 fresh basil leaves
1/4 tsp. oregano
1 tbsp. chopped parsley
1 tsp. salt
1/4 tsp. freshly ground pepper
5 tbsp. olive oil
1/2 lb. fresh whole milk Mozzarella cheese, diced

PASTA:

6 qt. water
2 tbsp. salt
1 lb. ziti

Cut the tomatoes into bite size chunks and put in a serving bowl. Mince the garlic, basil, oregano and parsley together and add to the tomatoes. Add the salt, pepper, olive oil and cheese. Mix well and let rest at room temperature at least an hour. Bring salted water to a boil in a large pot. Add pasta and cook until it is al dente. Drain thoroughly and add to the tomato mixture. Mix well and serve immediately on warm plate.
