BANANA MUFFINS 
1 c. bran cereal, not flakes
1/4 c. milk
1 c. mashed bananas
1 egg
1/4 c. soft shortening
1 c. sifted flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/4 c. sugar

Combine bran and milk with the bananas. Add egg and shortening. Beat well. Sift together the dry ingredients and add to first mixture, stirring only enough to dampen all the flour. Do not overbeat. Fill greased muffin cups about 2/3 full. Bake at 400 degrees about 20 minutes. Makes 1 dozen.
