TRI-COLOR RICE 
5 c. white rice (cooked with salt)
1 c. beets (cooked)
2 c. spinach or green beans (cooked)
2 c. carrots or pumpkin (cooked)
3 c. chicken broth

Divide white rice and chicken broth into 3 parts. Mix each of vegetables with broth in a blender. Each one should have the consistency of a heavy sauce, then mix each sauce individually with rice. You now have 1 container each of purple, yellow and green rice. If colors are not strong you can add food coloring according to desire.

In a medium pyrex bowl place the Green rice on bottom and press with a spoon. Next layer is the Yellow followed by the purple. If you wish to add another color, you may do so by adding a layer of White rice.

You may garnish this with scallions or shredded hard boiled eggs, olive rings.
