WHOLE WHEAT BANANA BREAD | |
1 1/4 c. all-purpose flour 1/2 c. whole wheat flour 1 tsp. baking soda 1/4 tsp. salt 1/2 c. sugar 1/4 c. Puritan oil 1 egg 1 c. ripe banana, mashed (about 2 med. bananas) 1 tsp. vanilla extract Vegetable cooking spray Combine first 4 ingredients in a small bowl; stir well and set aside. Combine sugar and Puritan oil in a medium mixing bowl; beat at medium speed of an electric mixer 2 minutes, or until well blended. Add egg; beat until light lemon-colored. With mixer running at low speed, add flour mixture alternately with banana, beginning and ending with flour mixture. Blend well after each addition. Stir in vanilla. Pour batter into an 8 x 4 x 9 x 2-inch loaf pan coated with cooking spray. Bake at 350 degrees for 45 minutes, or until a wooden pick inserted in center comes out clean. Cook 15 minutes in pan on a wire rack. Remove from pan and let completely cool on a wire rack. Makes 16 servings. |
