APPLE ROLLS | |
4 c. pared and diced apples 2 c. sugar 2 tsp. baking soda 1/4 tsp. all spice 1/4 tsp. nutmeg 3/4 tsp. cinnamon 1 c. butter (melted) 2 eggs (slightly beaten) 1 c. pecans (coarsely broken) 3 c. flour 1/4 tsp. salt 2 tsp. vanilla Grease and flour 2 (1 pound) tall coffee cans. In medium bowl stir together the apples, pecans and sugar. Let stand 1 hour, stirring often so mixture makes its own juice. In large bowl, stir together flour, baking soda, salt and spices. Add apple mixture and stir well. Add butter and vanilla. Stir in eggs. Turn into prepared coffee cans. Tie a 2 inch band of foil around top of each can. Bake in preheated 325 degree oven for 1 hour 15 minutes. Cool cans on wire rack 10 minutes, remove foil. Turn bread onto rack. Serve warm as a cake or cold as a tea bread with cream cheese. |
