STREUSEL-LAYERED COFFEE CAKE | |
1/2 c. light brown sugar, firmly packed 2 tbsp. butter, softened 2 tbsp. all-purpose flour 1 tsp. ground cinnamon 1/2 c. coarsely chopped nuts (walnuts) BATTER MIXTURE: 1 1/2 c. sifted all-purpose flour (sift before measuring) 2 1/2 tsp. baking powder 1/2 tsp. salt 1 egg 3/4 c. granulated sugar 1/3 c. butter melted 1/2 c. milk 1 tsp. vanilla extract 1. Preheat oven to 375 F. Using solid vegetable shortening, lightly grease the inside of an 8x8x2 inch square baking pan or a 9 x 1 1/2 inch round layer cake pan. Assemble all ingredients needed for cake before you begin the streusel mixture and batter. 2. Prepare Streusel Mixture: In a small bowl, combine brown sugar, 2 tbsp. soft butter, 2 tbsp. all-purpose flour, ground cinnamon and nuts. Mix with a fork until flour mixture is crumbly and ingredients are thoroughly combined. Set aside. 3. Make Batter: Sift flour with baking powder and salt over a piece of waxed paper and set aside. In a medium sized bowl, beat egg with a mixer until frothy. Add sugar and butter and beat until thoroughly blended. Add milk and vanilla; stir in flour mixture. 4. Spoon half of the batter into the prepared pan you have selected. Sprinkle half of the streusel mixture evenly over the batter. Spread remaining batter on top of the streusel layer; sprinkle batter again with remaining streusel mixture. 5. Put pan on center rack in oven and bake for 25 to 30 minutes or until a cake tester or wooden pick inserted in the center of cake comes out clean. If cake is not done, return to oven and bake for a few minutes longer. Top of cake should be a light golden brown. |
