CEREAL COFFEE CAKE 
1 3/4 c. self-rising flour
1 c. sugar
1/3 c. butter, softened
1 egg
1 c. milk
1 1/2 c. wheat cereal
For topping - see below

Heat oven to 350 degrees. Grease square pan, 9 x 9 x 2 inches. Blend all ingredients, except cereal and topping; beat 2 minutes. Fold in cereal. Spread in pan. Sprinkle crunchy topping over batter. Bake 35 to 40 minutes or until wooden pick inserted in center comes out clean. Serve warm. 9 to 12 servings.

Crunchy Topping: Mix 1/4 cup brown sugar (packed), 2 tablespoons flour, 1 teaspoon cinnamon, and 2 tablespoons firm butter until crumbly.
