APRICOT ICE BOX COOKIES 
Crushed graham crackers or vanilla wafers (about 2 c. crushed)
1 c. white sugar
3/4 c. butter
2 eggs
3 tsp. cream
1 tbsp. vanilla
1 lg. can apricots drained
1/2 c. chopped nuts

Put crumbs about 1/2" deep in flat casserole. Beat butter and sugar, add eggs and beat good. Add this mix to crumbs. Add cream and vanilla to apricots that have been cut into small pieces. Add small carton Cool Whip and nuts. Refrigerate. Easy and delicious.
