YANKEE APPLE JOHN 
FILLING:

6 tart apples, thinly sliced
1/3 c. sugar
3/4 tsp. cinnamon
1/2 tsp. salt

COVER:

2 c. sifted flour
3 tsp. baking powder
3/4 tsp. salt
1/2 c. Crisco
2/3 c. milk (about)

Fill shallow dish (greased) with apples. Mix sugar, spices and salt. Sprinkle over apples. Sift flour, baking powder and salt. Cut in Crisco until fine as cornmeal. Add milk mix to soft dough. Knead lightly for 20 seconds. Roll to fit dish. Put over apples, brush with milk. Bake at 425 degrees for 25 minutes. Serve with Nutmeg Sauce.

SAUCE:

1 c. sugar
1/4 tsp. flour
Dash of salt
2 c. boiling water
1 tbsp. butter
1 tbsp. vinegar

Mix dry ingredients in pan. Add boiling water. Stir constantly until well blended. Add butter and boil 5 minutes. Remove from stove and add vinegar. Serve hot.
