CREAMY SWEET POTATO CASSEROLE 
3 c. mashed sweet potatoes
1 c. sugar
1/3 c. butter
Dash of cinnamon
1/2 c. milk
2 eggs
1 tsp. vanilla
1 c. coconut
1 c. walnuts
1 c. brown sugar
1/3 c. flour
1/3 c. melted butter

Process in food processor the first 7 ingredients. Spoon into buttered baking dish. Combine coconuts, walnuts, sugar, flour and butter into crumbled mixture. Sprinkle over top. Bake at 400 degrees for 20 minutes or until heated through.

VARIATION: Omit crumb topping. Cook for 20 minutes as above. Remove and place miniature marshmallows on entire top. Broil just to brown top of marshmallows.
