POTATO CREAMY PUFFY CASSEROLE 
1 (8 oz.) pkg. cream cheese
4 c. hot mashed potatoes
1 egg, beaten
1/3 c. finely chopped onion
1 tsp. salt
Dash pepper

Beat until creamy. Top with bread crumbs or croutons and grated cheese. Bake at 350 degrees for about 45 minutes. Serves 6 to 8 people (make a day ahead).
