SHRIMP CREOLE 
1/2 med. size onion
1/2 c. chopped mushrooms
2 tbsp. butter
2 tbsp. flour
1 c. mushroom broth
1 c. water
1/2 tsp. salt
1/8 tsp. pepper
Dash of cayenne pepper
1/4 tsp. thyme
1 bay leaf
2 pimentos, chopped
2 c. cooked shrimp
4 wheat biscuits
3 sprigs parsley
Butter

Saute onion and mushrooms in butter for 3 minutes. Stir in flour and cook 1 minute. Add liquid gradually. Cook until thickened. Add seasonings, pimentos and shrimp. Cook 5 minutes. Remove bay leaf. Serve on wheat biscuits which have been cut lengthwise. Garnish with parsley.
