LEMON-COCONUT SQUARES 
1 c. graham cracker crumbs
1/2 c. melted butter
1 (14 oz.) can sweetened condensed milk
1/3 c. lemon juice
1/2 tsp. lemon rind, grated
1 (12 oz.) container Cool Whip
1 (7 oz.) bag coconut

Melt butter and combine with graham cracker crumbs. Press in 9x9 pan. Combine milk, lemon juice and rind in bowl. Fold in 3 1/2 cups of Cool Whip and 1 1/2 cups coconut. Spread this mixture on top of crumbs. Sprinkle with remaining coconut. Chill at least 2 hours. Cut into squares. Top with remaining Cool Whip and lemon slices.
