JALAPENO CORNBREAD 
3 c. cornbread mix
2 1/2 c. milk
1/2 c. salad oil
1 lg. onion, grated
2 tbsp. sugar
1/2 c. cheddar cheese, grated
1/4 c. chopped pimiento
Garlic salt (dash)
1 c. cream style corn
1/3 c. jalapeno pepper, chopped fine
1/4 lb. bacon, crisp & crumbled
3 eggs, well beaten

Mix all ingredients in order listed except put cheese in after the pepper. Mix in large bowl. Pour into well greased shallow pans. Bake in 425 degree oven until real brown, about 45 minutes. This freezes well.
