CANDIED ORANGE SLICES 
5 med. oranges
1 tbsp. salt
4 c. water
2 c. sugar
2/3 c. water

Gently run knife around orange cutting just into skin of orange. Divide into sixth; loosen skin with a blunt knife to remove. Gently scrape out excess pulp. Cut peel into strips with sharp knife or kitchen scissors.

Add salt to 4 cups water; add peel. Weight down peel with bowl or plate to keep peel under salt water. Let stand overnight.

Drain, rinse and cover with fresh cold water; heat to boiling. Drain and repeat this process three times. This will remove bitter taste.

In saucepan, combine sugar and 2/3 cup water; add orange peel. Heat and stir until sugar dissolves. Reduce heat and cook slowly until peel is translucent. Drain off excess liquid, roll in granulated sugar. Place on rack to dry. Store in airtight container. Keeps well for several weeks.
