APPLE CAKE 
4 c. chopped apples
2 c. sugar
2 c. flour
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1/2 c. Wesson oil
1 tsp. vanilla
1 c. pecans

Chop apples. Add to sugar and let stand. Mix oil and eggs. Add flour, soda, cinnamon and salt alternately with apples and sugar. Add vanilla and nuts.

Bake in a tube pan at 350°F for 1 hour.

Topping:

1/2 c. coconut
6 tbsp. melted butter
1/2 c. brown sugar
1/4 c. evaporated milk

Mix over low heat. Pour over cake while hot. Sprinkle cake with 1/2 cup chopped nuts.
