LAYERED ENCHILADA PIE 
1 lb. lean ground beef
1 med. onion, chopped
1 clove garlic, minced
1/4 tsp. salt
1/4 tsp. pepper
1 tbsp. chili powder
1 c. tomato sauce
6 corn tortillas (lightly buttered)
2 c. shredded Cheddar cheese
2/3 c. water

Saute ground beef, onion and garlic. Stir in seasonings and tomato sauce.

In a round 2 quart casserole, alternate layers of tortillas, meat sauce and 1 1/2 cups cheese. Sprinkle remaining cheese on top. Pour water around edge into bottom of pan. Cover and bake at 400 degrees for 40 minutes. 4 servings.
