ORANGE ROUGHY ITALIANO | |
3 tbsp. olive oil 1/2 c. sliced onions 2 c. thinly sliced zucchini 1 tsp. dried oregano 1 tomato, chopped 1 lb. orange roughy, cut into serving size pieces Salt and pepper 1/2 c. roped provel cheese Heat oil in large skillet. Add onion, zucchini and oregano and saute over medium high heat, stirring often - 4 minutes. Put tomatoes and fish over vegetables. Sprinkle fish with salt and pepper. Cover skillet, reduce heat, and simmer until fish is opaque and flakes easily with a fork, about 9 minutes. Uncover skillet and sprinkle fish with cheese. Cover skillet until cheese melts, about 1 1/2 minutes. Serve immediately. 4 servings. |
