POACHED FISH 
2 lbs. fish (steaks, fillets, or roast)
Water to cover fish
1 bay leaf
6 peppercorns
1 slice onion
1 sprig parsley
1/2 tsp. salt
1 slice lemon

Pour water into large skillet. Add salt, lemon slice, onion, parsley, bay leaf and peppercorns. Bring to boil for 5 minutes. Reduce heat and add fish. Cover and simmer 8-10 minutes or until fish flakes when tested with a fork; drain fish.

Serving suggestions: Serve poached fish with melted butter or favorite sauce. Use poached fish for salads, casseroles, creamed dishes or sandwich fillings. Serves 6.
