CAULIFLOWER CASSEROLE 
1 lg. head cauliflower
1 sm. can peas
8 oz. Velveeta cheese
5 oz. sour cream
12-15 Ritz crackers
2-3 tbsp. butter

Cook cauliflower until just barely tender. At same time, melt Velveeta and sour cream in saucepan. Place vegetables and melted mixture in 2 quart shallow casserole dish. Crush crackers and sprinkle on top. Pour melted butter (butter) over crackers. Bake at 350 degrees for 20 to 25 minutes.

MICROWAVE DIRECTIONS: Place cauliflower in 2 quart microwave casserole dish; add 2 tablespoons water. Cook on full power for 3 to 4 minutes or until tender. Add melted mixture, crushed crackers and melted butter per above. Heat, covered, on medium power for 4 to 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
