BELGIAN ENDIVE SALAD 
Several Belgian Endives, cleaned and in 1/4 inch slices
1 tbsp. Dijon mustard
Pinch of salt
4-5 turns of pepper mill
1 tsp. vinegar
3 tbsp. peanut oil
Herbs to taste
1 1/2 tsp. chopped chives
2 apples, cut into fine pieces
2-3 tbsp. bacon, cooked, drained and crumbled

Mix all ingredients together in a bowl and serve.
