BEEF STROGANOFF 
3 lbs. beef tenderloin, cut in strips
1 lb. mushrooms, sliced
1/4 lb. butter
2 lbs. Bermuda onions, sliced
1/2 c. catsup
1 tsp. salt
1/8 tsp. pepper
3 tbsp. soy sauce
1 1/2 c. sour cream
3 pkgs. Herbox beef broth
2 c. water
Parsley, chopped
Flour, enough to coat meat

Saute' onions in butter and remove to separate dish. Brown mushrooms in butter and remove to separate dish. Season meat with salt and pepper and coat with flour. Put in 3 quart deep or round casserole dish. Add catsup, soy sauce, onions and parsley. Add beef broth and water. Cover and cook in 325 degree oven for 1/2 hour. Add mushrooms. Cover and continue cooking for another 1/2 hour. Remove from heat for 15 minutes. Add sour cream and serve.

This is very good served over Green Spinach Noodles.
