REFRIGERATED COCONUT COOKIES 
1 c. flour
6 pkg. sugar substitute or equivalent to 1/2 c. sugar, suitable for baking
1/4 tsp. baking powder
1/4 tsp. salt
2 tsp. coconut
1/4 c. butter
1/4 c. unsweetened fruit juice (your choice)
1 tsp. vanilla

In bowl cream together sugar substitute and butter. Add fruit juice and vanilla. Then combine dry ingredients in another bowl and add that to the creamed mixture. Add the coconut. After mixing ingredients roll the dough out into a roll, wrap in wax paper and refrigerate until firm. Preheat oven to 400 degrees. Cut cookies into 1/4 inch thick slices. Place on a cookie sheet and bake for 10 minutes.
