VELVET HOTCAKES 
These sound nearly irresistible. You may have to double the recipe! Serves 4.

3 eggs, separated
3 tbsp. sugar
1/2 c. flour
2 tbsp. cornstarch
2 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
1/2 c. yogurt

Cream together egg yolks and sugar. Sift dry ingredients and combine with egg yolk mixture, milk, and yogurt. Mix well. Beat egg whites until stiff and fold in. Bake on medium hot grill. Serve with butter and honey.
