1/2 c. oil 2 c. rice 1 onion, chopped Leftovers of meats and vegetables 3 c. boiling water Tony Chachere's seasoning to taste To success with this recipe, there must be some leftover meats. If none are available, use turkey necks, sausage, salt pork, ham scraps or wieners. Pan fry rice in oil until light brown. Add onions. Cook 3-5 minutes. Drain off excess oil. Slowly add to boiling water along with any leftovers available. Mix well. Cook until water is absorbed into rice. Cover. Reduce to low heat. Cook 20 minutes or until rice is tender. |
