HOMINY SPECIAL 
1 lg. c. hominy
2 c. left over meat
1/2 c. water or stock
4 oz. grated cheese
1 tbsp. olive oil
1 finely chopped onion
1/2 tsp. salt
dash pepper

Saute finely chopped onion in olive oil until opaque. Add the hominy, meat and water and steam until the liquid is evaporated. Add salt and pepper and sprinkle cheese on top. Cover to let the cheese melt.
