Pig's head or (if one hasn't the head) 3 lbs. pork 1 lb. beef 1/2 lb. liver (you can add other meat scraps) 3 parts buckwheat 1 part graham flour 1 tbsp. salt Other recipes vary the proportions of meat. You can use 2 parts buckwheat or 1 part graham. Cover the meat in a large pot with water and boil until all meat falls off the bone (about 1 1/2 hour). Grind the meat finely in meat chopper, reserving the liquid. Strain the liquid, add to ground meat in pan, and bring to a rapid boil. Slowly add the flours, stirring constantly until mixture is too heavy or stiff to stir. Put into loaf pans immediately refrigerate. For breakfast slice and brown in a little shortening. |
