PASTA PRIMAVERA | |
1 pkg. linguine 1 pkg. frozen spinach Head of broccoli 1 med. zucchini 5 cloves garlic 1/3 can crushed tomatoes Basil, fresh is best but can use dried 1/4 c. olive oil Mushrooms Any other favorite vegetables, e.g. green beans, carrots, etc. Sprinkle with fresh Parmesan, grated Boil pasta according to directions. Crush garlic into olive oil in a large pan. Toss in broccoli and sliced zucchini. Cover and steam 5 minutes (you may have to add a little water). Put the spinach into the microwave and defrost. Add to the broccoli and zucchini after breaking it into about 6 clumps. Add all other ingredients and steam for a further 3 minutes. Do not mix up. Keep in separate columns. Slide over the pasta and sprinkle with cheese. It is nutritious and children love it! |
