MEXICAN SOUP 
1 lb. ground chuck
1 chopped onion
2 eggs
1/2 c. uncooked rice
3 carrots
3 potatoes
1/4 tsp. mint flakes
1 pkg. Knorr (garden vegetable) soup mix
Salt and pepper

Mix chuck with rice, egg, and 1/2 onion. Salt and pepper to taste, add mint flakes. Shape into small meat balls and drop into boiling water. Cook 1/2 hour. Add cut up potatoes, carrots and Knorr soup mix. Simmer 1 hour, medium heat.
