BREAKFAST TAKE ALONGS 
2/3 c. butter
2/3 c. sugar
1 egg
1 tsp. vanilla
3/4 c. all purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. dry oatmeal
1 c. shredded cheddar (4 oz.)
1/2 c. wheat germ or finely chopped nuts
6 crisply cooked bacon slices, crumbled

Beat together butter, sugar, eggs, and vanilla until well blended. Add combined flour, soda, and salt. Mix well. Stir in oats, cheese, wheat germ, and bacon. Drop by rounded tablespoonfuls onto greased cookie sheet.

Bake in a 350 degree oven for 12-14 minutes, or until edges are golden brown. Cool 1 minute on cookie sheet. Remove to wire cooling rack. Store in loosely covered container in refrigerator or at room temperature.

Yields 3 dozen cookies.

These "cookies" are a must any time our family starts on vacation. Whether it is a road trip or an air flight, they make a great portable breakfast or mid-morning snack. They also freeze well. I substitute Oscar Mayer Ready to Serve Bacon Bits for bacon slices to simplify the preparation.

Theses are delicious, nutritious little ways to start off the day. We have been making these for at least 30 years. They were originally printed in a promotional recipe collection for Quaker Oats (I believe). I often sub real bacon bits for the cooked bacon when I am short on time or bacon.
