SEAFOOD GUMBO | |
1/2 lb. fish 1 lb. shrimp 1/2 lb. crabmeat 1/3 c. flour 1/3 c. oil 2 c. chopped onion 1 c. chopped bell pepper 6 cloves garlic 2 1/2 c. chicken broth 10 oz. frozen okra 1/4 tsp. red pepper 1/2 tsp. thyme leaves 2 bay leaves Salt & pepper to taste Rice File powder (optional) Thaw fish, shrimp and crab if necessary. Mix the oil and flour in a 4 quart saucepan and cook over medium-high heat, stirring constantly until roux turns reddish brown (color of an old penny). Add onion, green pepper and garlic. Saute for 10 minutes. Add chicken broth, okra, red pepper, bay leaves, thyme, and salt and pepper to taste. Cover and simmer 30 minutes. Add meat. Simmer 5 to 10 minutes. Serve over rice. Add file at the table. Makes 6 servings. |
