BREAST OF CHICKEN FIESTA 
1 c. Cheddar cheese cracker crumbs
2 tbsp. taco seasoning mix
8 chicken breast halves, skinned and boned
4 green onions, chopped
2 tbsp. butter, melted
2 c. whipping cream
1 c. (4 oz.) shredded Monterey Jack cheese
1 c. (4 oz.) shredded Cheddar cheese
1 (4 oz.) chopped green chilies, drained
1/2 tsp. chicken flavored bouillon granules

Combine cracker crumbs and taco seasoning mix, stirring well. Dredge chicken in crumb mixture, and place in a greased 13 x 9 x 2 baking dish. Saute green onions in butter until tender. Stir in whipping cream and remaining ingredients; pour over chicken. Bake, uncovered at 350 degrees for 45 minutes.
