WONDERFUL WALNUT PUMPKIN PIE | |
1 unbaked 9 inch pie shell 1 (8 oz.) pkg. cream cheese, softened 1/4 c. sugar 1/2 tsp. vanilla 1 egg, slightly beaten Combine cream cheese, sugar and vanilla. Mix until well blended. Add egg; mix well. Spread on bottom of unbaked pie shell. 1/2 c. sugar 1 tsp. cinnamon 1/4 tsp. nutmeg 1 c. evaporated milk 2 eggs, beaten 1/4 tsp. ginger Dash salt Combine these ingredients. Mix well. Carefully pour over cream cheese mixture. Bake 350 degrees for 65 minutes. Cool. WALNUT TOPPING: 1 c. chopped nuts 4 tbsp. butter, melted 3/4 c. packed brown sugar Mix until well blended and brown sugar is melted. Spoon topping evenly over cooled pie. Broil 3 minutes (5-7 inches from broiler). CAUTION: Be careful not to burn topping. Check to be sure topping is golden brown. Cool pie. May top with whipped cream. (An impressive holiday pie.) |
