CHICKEN EN CASSEROLE 
1 chicken, cut in pieces
Butter, vegetable oil or other shortening
1 pt. rich brown stock
1 sm. can mushroom pieces
1 c. potatoes, cut up
1 c. sliced carrots
6 sm. onions
Salt, pepper and paprika

Saute chicken pieces until well browned. Place in a greased casserole. Add stock, cover and cook at 350 degrees for 1 hour. Saute carrot slices, potatoes, onions, mushrooms until brown. Add to chicken in casserole. Season with salt, pepper and paprika. Cover and cook 3/4 hour. Uncover and let the chicken brown.
