HOMEMADE BREAD
3 1/2 c. whole wheat flour
3 1/2 c. white flour
2 pkgs. yeast
2 tsp. salt
3 eggs, at room temp.
1 c. water
4 tbsp. butter
1 c. milk
1/2 c. brown sugar

Place whole wheat flour in a large bowl. Mix in yeast and salt. In a small bowl, beat eggs. Reserve 1 tablespoon to brush the loaves.

Bring water to a rolling boil. Turn off heat, but leave the pan on the burner. Add butter; when it is completely melted, add milk and brown sugar.

Pour liquid into flour-yeast mixture. Add beaten eggs, and beat until smooth--about 3 minutes. Add 3 cups of the white flour. Mix until it sticks together, and dump onto a bread board with the remaining flour. Knead about 10 minutes, adding more flour, if necessary.

Let rise in a warm place for 20 minutes. Punch down and divide in half. Shape loaves, and place in well-greased loaf pans. Let rise for 45 minutes. Add 1 tablespoon water to the remaining egg and brush loaves.

Bake at 350 degrees for 35 to 40 minutes.
