PINEAPPLE BREAD PUDDING | |
1/2 c. butter, softened 1 c. sugar 1/2 tsp. cinnamon 4 eggs 1 (13 1/4 oz.) can crushed pineapple, drained 2 c. 1/2" bread cubes (3 slices) 1/4 c. chopped pecans Heat oven to 325 degrees. Beat butter, sugar and cinnamon in large bowl on medium speed for 1 minute. Add eggs, beaten on high speed until light and fluffy 2 minutes. Fold in pineapple, bread and pecans. Pour in buttered 1 1/2 quart casserole dish. Bake 40-45 minutes until toothpick in center comes out clean. |
