LINZER TORTE--"OMA CAKE" 
2 c. flour
1 1/4 c. sugar
1 tsp. vanilla extract
4 drops almond extract
1 tsp. cinnamon
1 sm. dash ginger
1/2 tsp. nutmeg
1 1/4 sticks butter
1 3/4 c. hazelnuts, chopped fine
1 tsp. baking soda
1 tsp. lemon rind
1 egg white
1/2 egg yolk

Sift flour, add all ingredients (except egg yolk) together. Cut butter into little squares and mix until smooth. Grease round pizza pan well. Place 3/4 of dough on pan and roll out on pan, forming little edge around.

Spread about 100 grams of jam (strawberry, raspberry or currant) evenly on top of dough. Roll out leftover dough and cut into strips. Place strips criss-cross over jam.

Beat 1/2 egg yolk and mix 1 tablespoon water with it. Brush on strips. Bake at 325 degrees for 35 to 40 minutes. Place on rack to cool.
