LEMON BREAD | |
2 c. flour 1 tbsp. baking powder 1/4 tsp. salt 1/2 c. butter, softened 1 c. sugar 2 eggs 1 tsp. lemon extract 3/4 c. lemonade Preheat oven to 350 degrees. Butter and flour 9 x 5 x 3 inch loaf pan. Line bottom with waxed paper. Butter and flour waxed paper. In medium bowl thoroughly stir together flour, baking powder and salt. Set aside. In small mixer bowl, beat butter and sugar at medium speed of electric mixer until light and fluffy scraping sides often. Add eggs, beat well. Beat in extract. Beat in dry ingredients alternately with lemonade, at low speed until blended. Spread evenly in loaf pan. Bake at 350 degrees for 60 to 65 minutes. Cool in pan on rack 10 minutes. Remove from pan. Peel off wax paper. Cool bread on rack. Makes 1 loaf. |
