CAJAN MAQUE CHOUX 
1/2 c. chopped onion
2 tbsp. butter
1 med. tomato, chopped
1/4 tsp. pepper
1/4 c. chopped pepper
4 c. fresh cut corn
1/4 tsp. salt
1/4 tsp. red pepper

Combine onion, pepper, and butter in a 1 quart casserole dish. Microwave on high for 3 to 4 minutes or until tender. Stir in corn, tomato, salt, black pepper, and red peppers. Microwave on high 6 to 8 minutes or until flavors are blended. Makes 6 servings, 137 calories each.

Traditionally, Mague Choux is prepared by taking a knife and cutting a narrow portion of corn from cob. Then use knife to scrape the milk from kernels left on cob. Put liquid with corn in cooking it for a rich flavor.

Since microwave ovens vary in power, you may need to adjust your cooking time.
