BANANA - PECAN BREAD 
1 3/4 c. all-purpose flour
2/3 c. sugar
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 c. butter (1 stick)
1 c. mashed banana
1/2 c. chopped pecans
1 tsp. grated lemon peel
2 eggs, slightly beaten

Heat oven to 350 degrees. Grease 9 x 5 inch loaf pan. In large bowl, mix flour, sugar, salt, baking powder and soda. With pastry blender, cut stick of butter in until mixture resembles coarse crumbs. Stir in bananas, pecans, lemon peel and eggs just until flour is moistened. Spoon mixture evenly into loaf pan. Bake 55 minutes.
