ZUCCHINI SQUASH BREAD 
3 eggs
2 c. sugar
3 tsp. vanilla
1 tsp. salt
3 tsp. cinnamon
1/2 tsp. nutmeg
1 c. oil
2 1/2 c. grated zucchini
3 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 c. chopped dates
1 c. chopped nuts

Beat eggs until light and fluffy. Add sugar and vanilla. Sift all dry ingredients together and combine with squash, eggs, oil, nuts and dates. Mix well. Bake in 2 loaf pans which have been greased and floured. Bake for 1 hour at 350 degrees.
