FISH STEW 
2 lg. potatoes (peeled and cubed)
1 can stewed tomatoes
1 tbsp. parsley
1 tsp. oregano
1/2 tsp. basil
1/2 tsp. cayenne
1 tsp. salt
1 tsp. black pepper
2 lb. fish fillets (cut into 1/2 inch chunks)

Put potatoes in medium saucepan. Add 2 cups water. Bring to a boil. Reduce heat, cover and simmer 20 minutes. Stir in remaining ingredients. Bring to boil. Reduce heat, cover and simmer 15 to 20 minutes or until fish are done. Taste, adjust seasonings as desired.
