BANANA BREAD | |
3 ripe bananas (thinly sliced) 1/3 c. butter 1 tbsp. lemon juice 1/4 c. wheat germ 2 tbsp. Grape Nuts (optional) 3/4 c. sugar 1 egg + 1 egg white 1 1/2 c. flour 1 tbsp. baking soda In a medium-size bowl, beat together bananas, sugar, butter, egg, egg white and lemon juice. In another bowl, combine flour, wheat germ, and baking soda. Add dry ingredients to banana mixture, blending just until moistened. Pour batter in a 9x5x3 inch loaf pan lightly coated with vegetable oil cooking spray and dusted with flour. If desired, sprinkle Grape Nuts evenly over top of batter, gently patting into batter. Bake at 350 degrees for 50 to 60 minutes or until toothpick inserted in center comes out clean. Two mini-loaf pans may be used to make 2 small loaves. These smaller loaves will bake in approximately 30 to 40 minutes. |
