LEMON ICE CREAM PIE 
1 c. sugar
6 tbsp. butter
1/3 c. lemon juice
Dash of salt
2 eggs
2 egg yolks
1 pt. vanilla ice cream, softened
1 baked pie shell
2 egg whites
Dash of salt
2 tbsp. sugar

In saucepan, combine butter, lemon juice, sugar and dash of salt. Beat eggs and egg yolks slightly and stir into lemon mixture. Cook and stir over low heat until mixture boils; remove from heat and chill.

Spread lemon mixture into pie shell. Put in freezer until firm. Spread softened ice cream over lemon mixture; freeze. When ready to serve, make meringue of 2 egg whites, dash of salt and sugar. Spread over frozen pie, sealing to the crust. Bake at 500 degrees about 3 minutes or until golden. Serve at once.
