KLINKE'S BANANA-BRAN MUFFINS 
1 1/2 c. whole wheat flour
2 1/2 c. oat bran
2 1/2 tsp. baking soda
2 c. raisins
1 c. chopped walnuts
3/4 c. applesauce
1 tsp. cinnamon
2 eggs
2 c. mashed bananas
1 c. honey
1 c. skim milk
2 tsp. vanilla

In a large bowl, combine flour, bran, soda, raisins, nuts and cinnamon. In another bowl, beat eggs. Add applesauce, banana, milk, honey and vanilla. Mix wet and dry ingredients together; hand mix until just blended. Spoon into muffin tins.

Bake at 375°F for 18 to 20 minutes.

Yields 18 jumbo muffins or 24 regular size.
