TOMATO KETCHUP 
2 gal. tomatoes
2 c. chopped onions
2 tbsp. salt
2 c. sugar
1 tbsp. celery seed
2 tsp. mustard seed
1 tsp. allspice
2 sticks cinnamon
2-3 c. vinegar
2 tbsp. paprika
3 red peppers

Wash, drain, cure and chop tomatoes. Peel and chop onions. Cook tomatoes with onions until soft. Press through sieve. Boil rapidly until reduced about 1/2. Add salt, sugar and spices. Boil until thick. Add vinegar and paprika. Boil about 5 minutes or until thick as wanted. Pour boiling hot into jars and seal. Total time approximately 5 hours.
