CARROT-PINEAPPLE CAKE | |
3/4 c. all-purpose flour 3/4 c. whole wheat flour 1 c. sugar 1 tsp. baking powder 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. vanilla 2/3 c. salad oil 2 eggs 1 c. finely shredded carrots 1/2 c. crushed pineapple (with syrup) 1 tsp. vanilla 1 c. walnuts 1/2 c. raisins Sift together dry ingredients. Add remaining ingredients, mixing after each addition. Bake in greased and floured 9x9x2 pan in 350 degree oven about 35 minutes or until done. Cool 10 minutes; remove from pan. Cool. Frost with Cream Cheese Frosting. CREAM CHEESE FROSTING: 1 (3 oz.) pkg. cream cheese, softened 1 tbsp. butter, softened 1 tsp. vanilla 2 c. sifted confectioners sugar |
