PECAN ZUCCHINI BREAD 
3 beaten eggs
1 c. oil
2 c. sugar
2 tsp. vanilla
2 c. grated zucchini
1 c. crushed, drained pineapple
3 c. flour
2 tsp. baking soda
1 tsp. salt
1 1/2 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 c. chopped pecans

Mix eggs, oil, sugar and vanilla well. Stir in zucchini and pineapple. Combine flour, soda, salt, baking powder, cinnamon and nutmeg in zucchini mixture. Add pecans. Blend well. Pour into 2 greased and floured loaf pans. Bake 1 hour at 350 degrees. Cool 10 minutes in pan.
